What is the benefit of determining dry matter?

Determining the dry matter of a food sample makes it possible to conduct an accurate dosage of a component without having to consider the variation in humidity of the products.

For solid food, the solute concentrations will be defined as mass of solute per mass of dry matter of the weighed sample.
