Molecular interactions

A priori knowledge of the interactions most likely to occur between solute molecules and the matrix in which they are present is important: it helps you to choose the extraction solvent best able to break these interactions and effectively solubilize the solute molecules in order to extract them.

According to the chemical structure of the molecules, several kinds of interaction can occur (see example).

Note: we will only tackle here the subject of weak interactions that can be broken quite easily during extraction (the particular case of ionic interactions is therefore not addressed here).
